PROTECTION OF POPULATION HEALTH UNDER THE CONDITION OF COMPLIANCE WITH SAFETY PROCEDURES AT FOOD ENTERPRISES (literature review)

SUMMÀRY:
Goal. Monitoring safety measures at food establishments due to the worsening situation with the increasing number of cases of salmonellosis and leptospirosis among consumers of food establishments.
Object and methods of research. The article investigates preventive measures against cases of salmonellosis and leptospirosis in consumers, the quality of the introduction of requirements for food safety management systems in restaurant service establishments. Methods. Sources and methods of information search in domestic and foreign printed and electronic publications are as follows: methods of synthesis and analysis, comparison and generalization of information data.
Research results and their discussion. Based on statistical and informational data of scientific and practical achievements, cases of gastrointestinal infections, in particular, salmonellosis and leptospirosis, were tracked. Recent cases of mass poisoning in modern restaurants and violations of basic aspects of industrial safety at food enterprises were analyzed. Necessary measures to ensure health protection and food safety in food establishments were investigated.
Conclusions. The article examines the relevance of continuous monitoring of industrial safety according to DSTU, DSanPiN and HACCP, since according to the department of epidemiological surveillance of the Central Health Service, in recent years Ukraine has seen an increase in the number of cases of salmonellosis and leptospirosis. Within the framework of the project "Modernization of Epidemiological Surveillance in the Sphere of Public Health of Ukraine" (MISUPH), which is implemented by the State Institution "Center for Public Health of the Ministry of Health of Ukraine" within the framework of the EU4Health program, support the State Service of Ukraine for Food Safety and Consumer Protection and State Institutions of the Ministry of Health of Ukraine in cases of response to emergencies in the field of public health.
