SCHOOL NUTRITION: NATIONAL STANDARDS AND ORGANIZATION PRINCIPLES

SUMMÀRY:
Improving the organization of school nutrition is one of the immediate strategic tasks for improving the health and well-being of the population, which must be addressed and controlled at the state level. In Ukraine, a number of regulatory documents have been adopted to support the state system of providing students with school nutrition. The scientific support for the development and adoption of these documents, as well as the direct implementation of the adopted norms in the development and assessment of school menus, recipes, technological cards for dishes and drinks for school nutrition, is carried out by experts of the State Institution «O.M. Marzeiev Institute for Public Health of the National Academy of Medical Science of Ukraine». This article presents the results of many years of work in the field of creating and evaluating regulatory documents, recipes, technological cards, and menus for school nutrition.
The purpose of the work is to form the basic principles of organizing school nutrition, the implementation of which is necessary to improve the quality of students' nutrition and promote their health and learning.
Research methods: informational, bibliographic, regulatory-legal. System-structural, formal-logical, bibliographic methods, and the method of informal (traditional) analysis are used.
Object of research: regulatory-legal framework of school nutrition organization.
Subject of research: basic principles of organizing school nutrition, sample two-week menus, and collections of recipes and technological cards for school nutrition.
Research results. The article examines the basic regulatory documents of Ukraine aimed at improving the organization of school nutrition and the state system of providing students with school nutrition. The most important of them are the Order of the Ministry of Health of Ukraine dated September 25, 2020, No.2205 "On the Approval of the Sanitary Regulations for General Secondary Education Institutions," as well as the Resolution of the Cabinet of Ministers of Ukraine dated March 24, 2021, No.305 "On the Approval of the Norms and Procedure for Organizing Nutrition in Educational Institutions and Children's Health and Recreation Facilities", which are the guiding documents for ensuring children's school nutrition and relate to the organization and norms of healthy nutrition for children. The organization of school nutrition at the present stage requires taking into account the standards of healthy and safe nutrition, the needs and preferences of students, and ensuring the diversity and high taste qualities of the proposed dishes and products. However, the formation of a domestic regulatory framework for healthy school nutrition has not yet been completed. The issue of organizing nutrition for children with specific health problems remains unresolved. As a result of the work carried out, the term "students with special dietary needs" has been defined, the basic principles of organizing school nutrition have been formulated, relevant recommendations have been developed for the development of sample two-week menus for school nutrition, and collections of recipes and technological cards for school and preschool nutrition have been developed.
